ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.
We are currently seeking an experienced Head Chef to work out at our Hail Creek Village in Central Queensland catering for approximately 800-900 residents. This role reports directly to Site Management but would also need to be able to supervise up to approximately 15 employees at any given time.
- Work a 9 day on 5 day off roster, earning a salary of $109,025

The Position:
- Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employees.
- Buffet style bulk cooking for Breakfast, Crib, Lunch, and / or Dinner and Desserts
- Ensure OH&S compliance, adhering to safe work practices and food handling procedures.
- Ensure all catering controls are in place, and wastage is kept to a minimum.
- Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards.
- Managing catering team performance and employee development
The Person:
- Cert III in Commercial Cookery Minimum
- Demonstrated experience at a Head Chef level.
- Experience within bulk catering environments
- Excellent knowledge of all kitchen procedures and operations
- Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client.
- Experience with hygienic work practices and appropriate HACCP guidelines
A proactive leader who is professional, positive, supportive, and motivated with experience in training, and developing a team of hospitality professionals
